Skip getting a set of kienvs. Buy them as you can afford them. I like Henckel and Sabatier best.My most used kienvs are 6 and 8 inch chefs (either can be replaced with a santuko if that is what you prefer), a 3 1/2 inch paring, a filet knife and a boning knife. If you can only afford one, get a 8 inch chefs or santoku knife. You can always go cheaper on the paring knife. I love my boning and filet kienvs but they are relegated to part time duty and thus are less important. I own a viking range. I have a 4 burner stove with a double grill in the middle and a infrared broiler unit in the oven with convection. The most importing thing about a high end range are:1) High BTU burners Get at least 15000 -16000 burners (most commercial ranges are less than 10000 btu). I prefer gas burners to electric although electric ovens are nice. 2) Convection oven3) Infrared broiler The rest matters less. If I could do it again, I would replace my grill with a griddle. I use my grill very little because it is a mess to clean and I can easily use my outdoor grill any time of year. The two most important appliances are my food processor and stand mixer. Food processor get a 12 cup minimum and get kitchenaid or cuisinart. Stand mixer get kitchenaid.I have a cheap blender but would love a vitamix (can’t afford or justify the huge price tag) But, my blender is basically a margarita machine, so a cheap blender does me fine.
